If your monitor is at 60 Hz (which it usually is), it doesn't matter if your FPS is 60 or 100. The game will render 100 frames per second, but your monitor displays only 60. Vsync tries to keep the FPS same as your monitor Hz.
Each game has different requirements. Some game runs better with 100 fps , depends on gpu,cpu,...
I prefer 100 because there is space for fps drops , and sometimes vsync does not work well. I try a lot of games and have different PCs also different options in games.
When you play SP game you dont need much but when you play MP game every ms counts.
It is my opinion , when you play one game 5 years you don't see it.
