Watercooling - CORSAIR H80 (H100 won't fit)
RAM - CORSAIR DDR3 8GB (2x4GB)
CD/DvD Burner - Just in-case
HDD - Western Digital Caviar 2TB
SSD - Corsair Nova Series 2 2.5" 30GB (For OS)
Graphics Card - SAPPHIRE Vapor-X Radeon HD 7970 Ghz Edition 3GB 38

I'd take i5-2500K, I really doubt that you need 8 cores for gaming :) and 30GB SSD is too small, even for OS.. I mean, you can install Win7 and still have few GBs free but if you want to install any additional software... and if you want to install additional software on HDD then the whole idea of putting in SSD is a bit pointless. Get 64GB or ideally, 128GB.

i5-2500k is wonderful, bought it myself few months ago. The OC capabilities it has even with default coolers are great.

Redivivus:
I would recommend smth from product line of Crucial or OCZ for SSD though. Plus really, 30 GB is too small.
Yet yeah, i5 would be better, but, Sandy bridge? Meh. Why not Ivy?
Try this 2:  3770 or 3570
And as MB for this ones would be pretty good this one: GIGABYTE G1.Sniper 3

Hm but regardless, wouldn't it be a downgrade to go from the 3.6ghz 8-core to the 3.6ghz 4-core?
