Where exactly do these things graze? Or is there a special place to buy hides?

You have to walk around and hope for encounter with brahmins. After killing them you can loot hides.
Someone can write some locations full of brahmins ;)
I presume they're mostly around Modoc

Yeah i was wondering about ehere they hang out.. and i suspected as much as modoc

I've found them only once near Hub...

try Redding west west south

i usually scout in a wide area 2 cells south from the Hub
got a lot of them, both to the West and to the East from there
if you random encounter me - please spare my young life :P
i'm "Scout <whatever> M<whatever>"
like Scout Bow M1, Scout Las M2 etc.
