lets say i tagged big guns, i choose not to learn big gun level 1 and go for armor crafing 1,2 and explosives instead. Do i still do the same damage without the profession with a minigun? is it just simply "learn to craft" thing? thanks

Learning profession is only for the purposes of crafting, if I didn't miss anything.

how many professions can you have?

The profession expands your craft list only and it doesn't do anything with your damage or healing rate or anything else. You can have 3 grades of profession. For example: 3 grades of Small Guns or 2 grades of Energy and 1 grade of Armorer.
