Use the above methods for your first few levels and use the skill points gained to build your outdoorsman, science and repair up to atleast 40 each [the more the better]. It helps of course to have those skills tagged from the beginning. Once they are 40 or more you will be able to find useful crafting supplies in trash cans and will be able to pick up flints found laying around which can be made into primitive tools which can be used to chop wood. With a hammer you can mine ores and minerals out in the wasteland [completely random based on outdoorsman skill]. You can either buy your gathering tools or make them yourself [more xp that way].
For most things you will need to use the crafting table in a town. Crafting different things gives you different experience. It may depend on other skills and chosen profession what you can craft as well. Small guns skill I think needs to be 40% to start gunsmithing. Check your FIXboy for the requirements. Its under the PIPboy. I started out crafting 10mm's for close 60xp each! Thats much faster xp than anything else when just starting out.
Higher outdoorsman also helps you when you are out in the wastes looking for places to mine because you will be able to avoid many dangerous random encounters. You will always be outnumbered in the wasteland so unless you have over 100 hp and an extremely lethal weapon, I advise running everytime you are unable to avoid a random encounter. When crafting you want to stop and enter your own random places on the map, not the random places the game tries to stop you at.

A slight note about cows, with the curent of times..
So, shit shuvel' is [IMO] good until level 1. At level 2 xp drops.
