I suggest the traders lower their prices on items accordingly to the available amount and decline items under certain value.

Here: The arythmetical decline:

A radio costs, e.g. 1000 caps, if the trader has none of them. Also, he doesn't want any items worth below 200 caps, like shovels or shit.
With every additional radio, the price is lowered by 100 caps.

So, if the vendor has 9 radios, he bids and offers 100 caps for a radio, but hasn't any interest for more, since their price is now under 200. But then, you have a possibility to buy a radio cheap and sell it in another town profitable, depending on interest.

The demand would control the prices.

OR you buy all his radios for cheap and sell them back to him, now that he has no radios, for lots of money.

Good idea in concept, but it's shaky in how one would implement it

Hm, buying for 100+200+300+400+500+600+700+900+1000=4700caps and trying to sell for the same amount of money, getting a message, that he's not interested in this deal.

Yeah depends on how will it work.
Making interest check every time you drag item to barter table from vendor's inventory, then it'll cause odd effects, when 2 or more players want to buy something from the same vendor, so the price at bottom of barter table should refresh every frame or else it can be false.

The first player will have a higher priority and new rates are calculated after the deal?

Im loving this idea but how would this work with stackable items e.g. ammo??

The most simple solution would use random fixed or floating amounts near round values(106, 317, 487, 1021, 10351) as reference points for interest. Of course, gradual change would be a more elegant solution, but would require more complicated formulas.
