Can people steal from Brahmins? what happens to them when I log out? can I leave them at the tent to keep them safe?

If you have brahmin in city for example, or other public place and logout - he will stay and be waiting for you. Yes, everyone can steal from it. In tent he is safe

okay and what about caravans, are they worth getting as well?

aren't all NPC party members removed from the streets if they've been inactive for 24 hours (real life time) it they are in towns?
