Dead Man's Letters - Wiki / IMDB
Dr Strangelove can be mentioned too. The whole absurdness of it all can give you the view of events leading to Fallout.

The sky above the port was the color of television, tuned to a dead channel.

After Mad Max'es my fav post-apo movie (because this topic is about that than "falloutish") is Children of Men
But hey, don't forget about 'zombie post-apo like movies' like for example excellent movie 28 days later and it's sequel (28 weeks later). Also imho Resident Evil: Apocalypse and Resident Evil: Extinction counts in

I once did the same and watched probably 2/3 of these movies when I started working on FOnline myself. :) If you did the same, I'm looking forward to see your game even more.

I watched all of them except for every single episode of those long running TV shows! That would be an overkill ;)
And I read all the books and comics and played video games that inspired them too. I had to! I want to understand how the world of Fallout came to be so I don't do anything stupid (Bethesda wink wink)
