Same as the concept of buying Brahmin, I've never seen that option either.

Giftless has it right (or at least thats what I used to do the previous wipe) suicide burster alt to murder some cows in town then you should be able to sell yours to the trader.

By talking to him or you can just take a look and see how many brahmins there are in the pens. No idea about exact numbers thought.
