What causes the game to bug and display all black with the exception of people being generic burning images and all world props and items become red squares with questioning marks in the center of them?

a question do the diffrent craftable chest, lockers boxes give diffrent capacity or is it just cosmetic

Yes they all have a different capacity. Whereat the big ammo crates have the biggest capacity.
