I don't think you can mine in unguarded mines, except Gecko, and you can't have slaves mine HQ stuff either way. Try making your slaves mine in a guarded mine.

Two days ago I've spotted slaves in Redding Mines. They can mine there, but only HQ and LQ Minerals.

if we have for example 9ch + magnetic, and we have 5 slaves on the tent, can we capture more?

No, sadly. 5 is limit. No herds of brahmin or enslaved children anymore since March 2010 wipe  :'(
